Dry aging is the process by which large cuts of beef are aged before being trimmed and cut into steaks. Aged for at least 14 days for maximum tenderness, our dry aged beef develops more complex flavors as well as improved tenderness over time. You can expect "nutty" flavor notes, often compared to ripened cheeses.
