What are microgreens? Microgreens are a younger version of the leafy greens and herbs that we’re accustomed to. They sometimes go from seed to harvest in as little as a few days.
Are they better for you? According to the USDA, nutrient-dense microgreens can contain up to five times more vitamins and carotenoids than their mature plant counterparts.
How do they taste? Microgreens have a stronger flavor than mature greens, and the more intense flavor really makes them a great eating experience.
Any tips for how to use them? The applications for microgreens are extensive, and AeroFarms offers a free digital cookbook with ideas. I love to mix AeroFarms microgreens with an organicgirl salad for a slightly fancier, more nutritious meal. Microgreens also make great toppings for burgers, sandwiches and tacos.
