Prepare the spicy tuna mixture by combining the Wild Planet Albacore Tuna, Kewpie Mayo, sriracha and rice vinegar in a medium bowl and mix with a fork. Add scallions, reserving about 1 tbsp for a garnish. Mix until evenly combined.
Place about ½ cooked sushi rice in your hand and flatten slightly to create an oval and press a shallow trough down running along the center. Place about a tbsp of the spicy tuna mixture into the trough and gently press the rice up and around it. With care, gently form the rice into a thick triangle, keeping the grains together but not firmly packed. TIP: Dip your hands into fresh water to keep the rice from sticking to your skin.
Place the triangle base crosswise on a half sheet of nori and sprinkle with black sesame seeds. Fold the nori up both sides of the triangle. Garnish with an extra pinch of the spicy tuna mixture and a little scallion. Enjoy immediately before the nori gets soggy.
