Spiced Apple Highball:
Combine bourbon, Spiced Apple Syrup, and lemon juice in a highball glass filled with ice and stir well to combine. Top with sparkling water and apple slices to garnish. Serve immediately.
Spiced Apple Syrup:
Combine apple cider, sugar, cinnamon, allspice, nutmeg, and cardamom in a small saucepan over medium high heat. Bring to a boil, stirring occasionally until sugar dissolves, and continue to cook until reduced by half, about 8 minutes. Remove from heat and let cool to room temperature, about 30 minutes. Stir in vanilla. Store syrup in the refrigerator for up to one month.
