Shrimp and Feta Salad with Mango Dressing

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 lb peeled/deveined shrimp
  • Kosher salt and freshly ground pepper
  • 1 lb mixed greens
  • 1 c broccoli florets
  • 1 c grape tomatoes
  • 1 c green pepper, sliced into rings
  • 1 c baby peeled carrots
  • ½ c white mushrooms, sliced
  • ½ c red onion, diced
  • 1 bottle tropical flavored salad dressing such as mango or pineapple
  • 4 oz crumbled feta

Directions

Heat oil in a large skillet over medium high heat until it shimmers. Add shrimp, season with salt and pepper and cook on all sides until pink, 3-5 minutes.

Meanwhile, place salad greens and veggies in a mixing bowl.

When shrimp is done cooking, add to mixing bowl with greens and vegetables.

Pour half a bottle of dressing over salad mixture and toss with tongs to thoroughly combine. If mixture seems a little dry, add more salad dressing to taste.

Sprinkle feta over the salad mixture and serve.
