Ingredients

  • Kosher salt, to taste
  • ½ pkg (about 8 oz) Organic Pasta Toscana of choice
  • 1 tbsp vegetable oil
  • 1 lb chicken breast strips or raw peeled & deveined shrimp
  • 4 tbsp pesto of choice
  • Veggie Steamer Bag of choice
  • Garlic Knots or The Fresh Market Mini Chocolate Chip Cookies

Directions

Cook the pasta according to package directions.

While pasta is cooking, heat the oil over medium-high heat in a large skillet. Add chicken or shrimp to skillet and cook on all sides until just cooked through (6-7 minutes for chicken, 1-2 minutes for shrimp). Remove skillet from heat.

Microwave the steamer bag for 3-4 minutes until tender. Let the bag sit in the microwave for 1 minute before removing. Caution: Steamer bag will be hot and may release steam when opened.

Drain the pasta and add it to the skillet with the chicken or shrimp. Add the pesto and stir well to incorporate, adding more pesto if desired. Serve immediately.

To Serve: Divide pesto pasta onto four plates. Serve alongside veggie and bread or dessert of choice.

For Garlic Knots if using: (Ready to eat. Heating instructions follow, if desired.) Wrap garlic knots in foil and place in 350°F oven for 5-10 minutes until warmed through.
