Pan Seared Vegetables with Vinaigrette

Ingredients

  • 2 tbsp. olive oil
  • 1 whole yellow squash, cut into chunks
  • 1 whole zucchini , cut into chunks
  • 1 whole shallot sliced thinly
  • ½ bunch fresh asparagus, trimmed and sliced in 1” pieces
  • ½ c. Terrapin Ridge Farms Lemon Honey Vinaigrette

Directions

Heat skillet over medium high heat for 2 minutes. Add the olive oil and swirl to coat. Add vegetables and sauté for 3-5 minutes until nicely seared and golden brown. Turn off heat and stir in Terrapin Ridge Farms Lemon Honey Vinaigrette. Toss to combine and warm through.
