Combine olive oil, lemon juice, poultry rub and fresh thyme in plastic bag. Add chicken and allow to marinate a minimum of 1 hour and up to 3.
Preheat oven to 400˚F. Place chicken and marinade in baking dish. Bake 30-40 minutes, basting halfway through, until chicken is brown and an internal thermometer reads 165˚F.

Delicious! I have made this several times since you e-mailed customers this recipe. It has become a staple dish in my kitchen. It is fresh, healthy, and a delicious entree as is, but it is also very versatile and can be made into many other entrees. I have shredded the finished dish for tacos, served it in pasta and over rice, and added it to scrumptious Buddha Bowls alongside roasted sweet potatoes, fresh spinach, and avocado.
This was a very easy recipe. I used 3 or 4 fresh thyme sprigs and it wasn't overpowering at all. The chicken was moist and very tasty.
Tried this last night and everyone loved it! I served it with your quinoa rice mix and asparagus. Only bad part, no leftovers!
