Ingredients

  • 2 c honey
  • ½ c water
  • 3 whole cloves
  • 1 cinnamon stick
  • 1 vanilla bean pod, split
  • 2 lemon peel strips (2 inches long) from 1 lemon
  • 3 cardamom pods, lightly crushed
  • 2 allspice berries
  • 1 piece ginger root (2 inches long), cut in half lengthwise
  • 2 c 80 proof or greater vodka
  • 1 tsp orange extract

Directions

Combine honey, water, cloves, cinnamon, vanilla bean, lemon peel, cardamom, allspice and ginger in a medium pot over medium heat. Heat just until steaming, but do not bring to a simmer. Remove from heat, add vodka and orange extract, and then cover and let steep at room temperature for at least 4 hours or up to overnight. Strain through cheesecloth or coffee filter and discard solids. Transfer to sterile jars or bottles and store at room temperature in a cool, dark place for up to 1 year. Can be served warmed, chilled or at room temperature.
