Starting at the larger end, slide a knife under the white membrane and over a bone to lift and loosen the membrane. Using a paper towel, pull it off completely.
Place ribs in a large stockpot. Cover with chicken stock and water, more if needed to cover the ribs. Bring to a boil, reduce heat to a simmer and cook 1 hour 15 minutes. Remove from pot and pat dry.
Preheat grill to medium. Brush ribs generously with sauce. Grill ribs, turning often and basting with additional sauce, until meat is tender and outside is crispy and glazed, approximately 30 minutes. Slice ribs and serve warm.
