For the batter
Preheat oven to 375°F. Place peach slices in a large bowl. Add sugar, lemon juice, ginger and cinnamon and toss well to coat fruit. Allow mixture to sit for 5 minutes.
Place butter in a large cast iron skillet (12-inchround) or baking dish (13x9-inch) and warm in oven until butter melts completely, about 5 minutes. In a large bowl, combine flour, sugar, baking powder and salt. Add milk and stir until a wet batter forms. Pour batter over melted butter (do not stir). Spoon peach mixture evenly over batter (again, do not stir). Sprinkle evenly with cinnamon. Bake 40- 45 minutes or until top is golden brown. Serve warm with vanilla ice cream.

Best cobbler recipe ever, lost the old recipe, glad it was still available online. Peaches are arriving from GA. Making this recipe tomorrow. Wonderful served warm with whipped cream, or serve hot with ice cream. I agree with the other reviews to use less sugar , especially when peaches are in season. Works very well with canned peaches too, but drain them first.
If you are using fresh peaches, use less sugar. Makes a fabulous crust on the edge if using a cast iron pan. Ridiculously easy recipe , can’t fail if you follow the “do not stir” instructions when adding the batter to the melted butter, and then the peaches on top. Really , really good with ice cream.

This is an absolutely yummy recipe. It lends itself to twists, too. Had some the other night where the ginger was replaced with a ginger liqueur: Awesome. When I made it, I added 1 tsp limoncello, doubled the ginger, and only used 3/4 C of sugar in the batter: Awesome. Next time, I'll definitely use less sugar (1/2 C) in the peach mixture. This is going to be a regular dessert for home and away. Thanks.
Absolutely yummy. I used 3/4 c brown sugar in with the peaches. That was the only change I made. Best cobbler ever.
So simple and tasty! Used less sugar in the peaches and added candied ginger because it was already on hand. Next time, I'll use a little less sugar in the crust. This si a new favorite!
We have made this recipe several times. We love it every single time. The crust is crispy and buttery. We have decreased the amount of sugar that is used in the peach mixture. With a few tiny revisions, it is a recipe that has earned its ranks in our collection of staple recipes. It is super easy to throw together for dinner guests.
