Preheat oven 400°F. Place bread on a sheet pan. Lay prosciutto slices on each piece of bread, 6 pieces per flatbread. Using your fingers, gently break up cheese and dot it evenly over top, followed by equal dollops of fig spread. Sprinkle each evenly with fresh thyme.
Bake 5-10 minutes until cheese begins to melt and prosciutto begins to crisp. Cut into square pieces and serve warm.
*We prefer Valdeon Blue for this recipe but any blue cheese work

Could NOT find the herbed goat cheese I needed for the portobella caps recipe I am doing next, so I will sub with the blue cheese from this recipe. Very inexpensive as well.
