Combine the Cilantro Lime Dressing, cumin and paprika. Pour mixture over chicken coating all sides. Cover and refrigerate for at least two hours. (You could also refrigerate overnight if you want to prep ahead!)
Preheat oven to 425° F.
Place chicken on a greased sheet pan. Season generously with salt and pepper. Toss corn, peppers and sweet potatoes with enough olive oil to lightly coat. Season with salt and pepper. Arrange vegetables on sheet pan between pieces of chicken.
Bake 40-50 minutes until the chicken is golden brown and has an internal temperature of 165° F and the vegetables are tender and slightly crisp (these may be turned over half way through cook time). Remove from oven and allow to rest for 10 minutes.
Top with red onion and fresh cilantro. Squeeze lime juice over the chicken and vegetables before serving.

Delicious! Used bone in breasts instead of quartered chicken and subbed one of the sweet potatoes for a russet potato. The fresh lime, onion and cilantro at the finish was perfect!!
This was absolutely delicious. I added a couple of red potatoes, carrots and wedges of Vidalia onion to the vegetable mix and tossed with a small amount of the Cilantro Sauce rather than olive oil before baking. I also used bone in leg/thigh pieces rather than a whole chicken. I didn't top with red onion or cilantro. Only bad thing is I went back to my local Fresh Market and they no longer carry the sauce. Recipe shouldn't be on the site if not available.
This recipe is definitely a keeper! I made it at my fire station for dinner and it was a hit!! It's super easy to make. I used chicken breast instead of whole chicken quarters and added a little more cumin and paprika in the veggies when I mixed them up. Absolutely delicious!!
Excellent Recipe!!! very easy to assemble and is absolutely delicious. I like the option of marinating the chicken overnight (if I am working the next day) or marinating the chicken the same day for 2 hours. I cut extra corn and sweet potatoes. My daughter does not care for sweet peppers, so I roasted the mini sweet bell peppers (after tossing in oil) separately. It was a winner dish with my family and 91 year mother in law who lives with us. Thank you for another great recipe!!

Tastes as good as it looks. Add seasonal fresh vegetables as you desire. And consider including fresh apples and necterines or peaches.

This is very tasty and colorful dish. Cumin and cilantro added additional taste. This dish can be served Spring/Summer outdoor get together.

This was a great Sunday dinner. Comfort food! Only change I made was I used vidalia onion rather then red onion and I added it to the pan and cooked with the rest of the dish (I don't like raw onions) - hope there are more recipes like this!
