Blackened Shrimp with Nectarine Salsa

Ingredients

  • 2 nectarines, diced*
  • ½ c red onion, diced
  • ¼ c fresh cilantro, chopped
  • ½ lime, freshly squeezed
  • Kosher salt and freshly ground pepper
  • 2 tbsp extra virgin olive oil
  • 21-25 ct raw Wild Florida Shrimp
  • 2 tbsp The Fresh Market Blackened Spice Rub

Directions

In a medium bowl, combine nectarines, onion, cilantro and lime juice. Season with salt and pepper, to taste.

Heat oil in a large skillet over medium high heat. Season shrimp with blackening spice rub. Add shrimp to skillet and cook until color turns pink and opaque, turning to cook on both sides, about 3-5 minutes total. Cook in batches if necessary so as not to crowd the pan. Serve shrimp topped with salsa.

*If nectarines are not available, peaches or apricots can be substituted.
