Preheat oven to 400˚F and line a sheet pan with parchment paper.
Place the flatbreads onto the sheet pan and liberally brush with oil. Evenly distribute the cheese across each and then top with a single layer of sliced apples. Finish by layering the diced chicken and shallots over the flatbreads and bake for 12-15 minutes, or until the cheese melts and the edges of the flatbreads are brown.
Remove from oven and let rest 1-2 minutes before cutting and transferring to a serving platter. Top with fresh arugula and drizzle with balsamic glaze. Serve immediately.

Delicious and easy recipe. I used goat cheese with honey, thinking it would work with the balsamic glaze, and it did.

I’ve made this twice now and instead of arugula I used cilantro. I think it stepped up and already solid recipe. A great mix of flavors sweet and savory.
Since walnuts (not black walnuts) and apples have such an affinity, I sprinkled on a few chopped raw walnuts--they toasted as the "pizza" baked. Absolutely delicious and some extra crunch. I halved the recipe for our family of 2, and used one large naan as the flatbread--only slightly smaller than the flatbread specified. Flour tortillas could be another good sub, although the texture would be different.
Delicious recipe! I have made it several times for different events and all attending loved it - even asked for the recipe. I know several of those have now made it, too! I omitted the shallots since I am not a fan. I did have trouble finding the type of goat cheese listed in the recipe at my local Fresh Market so I wasn’t able to shred or shave it. I ended up spreading regular goat cheese on the flat bread since that was all I could find, and it worked fine. So yummy! I’m glad that you reposted the recipe because I was thinking about this recently and wanting to make it, but couldn’t find my copy of the recipe and couldn’t remember exactly how it was made. Thank you!

I've made this several times and our family loves it. So easy. I've also used The Fresh Market rotisserie chicken in place of the grilled chicken. This recipe stays in our favorite meal rotation.

I’ve made this dish for my family on a number of occasions. It’s the perfect combanation of flavors and I highly recommend it.
Didn't have the Spanish Goat cheese so I used pecorino and other cheeses. I also made this with a puff pastry and used lots more than 2 tbs of oil. Turned out really well!
