As we’re preparing more meals at home, many of us are stocking up on versatile freezer- and family-friendly ingredients—like, you guessed it, chicken. Whether it’s baked, sautéed or freshly roasted, chicken is a great mealtime mainstay for dining in. Here are a variety of ways to serve it up while keeping your menu fresh.
We like to cook a lot of chicken at once to use in different recipes throughout the week. You can also grab our roasted-in-store chicken to make your meals even easier. Bonus: it’s on sale every Thursday!*
If you’re preparing chicken yourself, we recommend cooking it in a slow cooker or oven.
In the slow cooker: Heat oil in large sauté pan over medium high heat until it shimmers, about 5 minutes. Season chicken breasts with salt and pepper. Add to pan and sear until golden brown on all sides, about 5-6 minutes per side (searing adds flavor, but you can skip this step if you’re short on time). Transfer the chicken and any juices to slow cooker. Cook on low for about 3 hours or until internal temperature reaches 165°F. Cut or shred.
In the oven: Preheat oven to 425°F. Place chicken breasts in casserole dish, drizzle with olive oil and add seasonings of your choice. Bake uncovered for about 18-20 minutes or until internal temperature reaches 165°F. Let rest 5 minutes before cutting or shredding.
Chicken Pot Pie
Save time with pre-made crust and frozen veggies! Combine chopped, cooked chicken with Pacific Foods Organic Cream of Chicken Condensed Soup and 1 cup of frozen mixed vegetables. Bake at 425°F for about 30 minutes until crust is golden brown.
