Not sure where to start? We’ve gathered some of our favorite products and recipes, from filling pasta to exquisite olive oils and tasting tips. (Yes, you should taste your olive oil before using it!) Make room in your pantry—you’ll want to have these ingredients on hand!

Fresh Vegetables

Vegetables are a Mediterranean mainstay. These can be enjoyed on their own or prepared as a side dish. The important things to remember are seasonality and simplicity. Cook what’s in season, and keep it simple to allow the main ingredient(s) to shine. Here are some of our favorites.

Mushroom Stuffed Artichokes

Artichokes

These flavorful vegetables are believed to be native to the Mediterranean region and are quite popular in Mediterranean cooking. Most artichokes grown worldwide are cultivated in France, Italy and Spain, while California produces a majority of the U.S. crops.

Look for artichokes that have a heavy, firm stem and tight, fresh-looking leaves. They don’t stay fresh for long, so we recommend refrigerating them in a plastic bag and cooking them within 48 hours of your purchase. Both the outer leaves and the interior, or heart, of the artichoke are edible.

Roasted Eggplant Salad with Feta and Herbs

Eggplant, Zucchini, Greens & Fennel

Eggplant is popular in dishes throughout the Mediterranean and is incredibly versatile. Its texture makes it ideal for meat-free meals but it’s equally tasty fried, grilled or roasted until the flesh is soft, then blended with garlic and lemon juice for a delicious spread or dip.

Zucchini is another versatile veggie, perfect for baking, roasting, sautéing and more. Keep it green with leafy favorites like Swiss chard, and if you’re looking for a unique and distinctive flavor, add fennel to the mix. Its slight licorice flavor adds dimension to a number of recipes, like our Celery, Fennel & Green Apple Salad (recipe below).

Beans, Grains & Rice

Provencal French Lentils

Lentils, cannellini beans, chickpeas, rice and polenta are a few of our Mediterranean-inspired favorites. The Fresh Market French Green Lentils are grown without synthetic pesticides and are a rich source of protein and fiber.

They’re also known as “Puy” lentils, since they originate in the Puy region of France. These lentils are peppery in flavor and retain a satisfying firmness after cooking. Try them in our Provencal French Lentils recipe.

Cannellini beans and chickpeas in particular are great for stews. You can also try them pureed with garlic for dip (think hummus). Polenta, an Italian staple, is typically served alongside meat or fish. Then there’s rice—the ever-versatile grain that’s delicious in Italian risotto, Spanish paella and more.

Pasta

Who doesn’t love pasta? From light dishes to heavy sauces, meaty recipes and vegetarian-friendly favorites, the pastabilities are endless. If you’d like to try something a little different, opt for The Fresh Market Whole Wheat Pasta. These noodles are satisfying and work well in a number of recipes.

One of our favorite Mediterranean-inspired ways to enjoy pasta is in Roasted Tomato Caprese Pasta. Flavorful garlic, bright lemon, extra-virgin olive oil, fresh mozzarella and basil create an aromatic and delectable combination of flavors. Try this recipe with The Fresh Market Artisan Linguini Pasta, cooked until it’s perfectly al dente and ready to savor.

How to Cook Pasta Like an Italian

  • Reserve a small amount of the leftover, starchy cooking water from your pasta to add to your pasta sauce. This can help stretch the sauce and also thickens it slightly.
  • Cook pasta until it’s al dente, meaning that is should still be a little firm to bite, and not too soft.
  • Drop the al dente pasta into your pasta sauce and allow it to finish cooking in the sauce. This allows the sauce to coat the noodles until they’re ready to serve.
  • Always, always season your pasta water! Add at least 3 tablespoons of coarse salt to your boiling water.

Bread

Every good Mediterranean meal calls for a crusty-on-the-outside, soft-on-the-inside loaf of bread.

We’ve added some flavorful, Mediterranean-inspired bread recipes to our offerings, including Crusty Italian bread (when Italians talk about good bread, this is what they’re talking about!), Sesame Semolina, Rustic Panella and more.

Our Olive, Pesto and Garlic Breads are baked with flavorful ingredients that meld beautifully with a variety of dishes. We also have Pane di Casa, or “bread of the house,” and Mini Cranberry Baguettini.

Olive Oil & Vinegar

Some of the best olive oil and vinegar is grown and produced in the Mediterranean. Spain takes the lead as the world’s largest olive oil producing country. Throughout the Mediterranean, organically grown olives are gaining popularity, as are organic olive oils.

We also offer Balsamic Vinegar sourced directly from Modena, Italy, the original home of balsamic vinegar. Our Two Leaf vinegar is traditionally crafted and stored in wooden barrels for natural fermentation. It features balanced acidity with a slight sweetness, perfect for adding rich flavor to marinades and salad dressings.

Tasting Olive Oil

Virgin olive oils boast a wide array of flavors and aromas. Olive oil can range from smooth to nutty to fruity, peppery, bitter and even fiery. Good EVOO will leave your mouth feeling clean—never oily or greasy. Here’s how you should taste your oil before you use it in a recipe (think of it like a fine wine):

  • Pour and warm. We suggest tasting your olive oil plain. Pour a small amount in a shot glass, tulip-shaped wine glass or plastic tasting cup. Cradle the glass in the palm of your hand and cover the opening with your other hand. Swirl it gently to release the aromas.
  • Sniff and sip. Lift your hand and smell the oil. What does it smell like? Grass? Fruit? Pepper? Take a sip—enough to coat the inside of your mouth.
  • Aerate and taste. Before you swallow, aerate the oil by opening your mouth and sucking in air through the oil to further release the aromas. You should feel the oil spritz the back of your throat. Then, close your mouth and breathe through your nose. Swallow the oil and notice its pungency.

Tinned & Brined Favorites

Greek Vegetable Salad

Foods like olives, capers and artichokes are delicious when stored in olive oil or pickled in brine. These processes also preserve the foods, so you can keep them on hand for longer.

We offer a wide array of imported olives for antipasto, snacks and salads. We also have capers sourced from the Mediterranean, perfect for adding a salty bite to salads, sauces or classic Greek recipes like Greek Vegetable Salad.

And, of course, our artichokes are a low-calorie, nutrient-rich favorite. Our provider has been growing artichokes in Castroville California—the “Artichoke Center of the World”—since 1924. They’re an excellent source of fiber, vitamin C and magnesium, not to mention they taste delicious!

Chicken and Fish

Lean proteins like chicken and fish are Mediterranean staples. For chicken, try our boneless, skinless chicken breasts. They’re all-natural and 99% fat free. They also come from chickens that are fed an antibiotic-free, 100% vegetarian diet. Click here for recipe inspiration.

If you’re cooking fish, there are plenty of options. We love our recipe for Poached Cod in Saffron Scented Tomato Broth. Rich, aromatic broth is the perfect complement to buttery, flaky cod.

The most important thing is making sure you’re using the freshest fish. We have several fish houses around the country that offer next-day delivery for the freshest possible product.

When selecting fish, use your senses:

Look and feel. Fresh fish should always look unmistakably bright and shiny. Check the texture by pressing the side of the flesh with your fingers—it should be soft but not mushy and should spring back quickly.

Smell. Fresh fish should smell like the sea and not unpleasant.
