Wash zucchini well. Peel onions and thickly chop both the onions and zucchini. Heat extra virgin olive oil in a large shallow pan, add vegetables and brown over high heat. When browned, lower heat, add salt, cover and cook another 10 minutes. Prepare farro penne pasta per instructions on the package. Drain pasta, and toss in pan with the onions and zucchini. Add a little salt and pepper and sprinkle freshly grated parmesan cheese before serving.
