Summer Fruit Salsa with Cinnamon Chips

Ingredients

  • 2 c chopped seedless watermelon
  • 1 c pitted fresh cherries
  • 2 peaches, peeled, seeded and quartered
  • 2 tbsp chopped mint leaves
  • 2 tsp lime zest, from 1 lime
  • 1 tbsp lime juice, from 1 lime
  • ⅛ tsp kosher salt
  • Cinnamon sugar chips, such as Siete Churro Strips

Directions

Chop watermelon into small pieces, ½ to ¼-inch in size, and place in a medium bowl. Place cherries and peaches in a food processor and pulse until fruit is finely chopped, about 15 times. Transfer to the bowl with watermelon and add mint, lime juice, zest and salt and stir to combine. Serve with cinnamon sugar chips.
