
Ingredients
- 2 lobster tails
- 4 tbsp unsalted butter
- Kosher salt and freshly ground pepper
Directions

1Trim Lobster Tail
Place lobster tail on cutting board. Using kitchen shears, trim down the center of the shell cutting towards the tail.

2Cut a "T"
Once you reach the tail, make a perpendicular cut from end to end to form a “T.”

3Loosen Meat
Using a paring knife, gently loosen the meat from the shell.

4Crack Shell
Using your hands,crack open the shell slightly.

5Lift Meat
Lift lobster meat out of shell and rest it on top of shell, leaving the meat connected at base of tail.

6Season Lobster Tail
Place lobster tail on baking sheet. Brush with melted butter and season with salt and pepper or your favorite seafood seasoning.

7Roast and Serve
Roast at 450°F for 10 minutes, keeping a close watch to avoid overcooking. Lobster is done when the internal temperature reaches 145 degrees and meat is pink and opaque.

I love to fish. I don’t mind cleaning normal fish like trout, and I don’t mind cooking them. But... ocean crustaceans are not familiar to me. So I followed the directions. When it came to the part about separating the meat from the shell I had a hard time. Not knowing what the meat was supposed to look like. Had I known that the red part was supposed to be part off the meat I may have done a better job:) The second tail looked much better. I cooked them for 10 minutes but they didn’t look quite right. There were juices running from the good looking one but the other had none so I added 5 more minutes. The pretty one was perfect, the ugly one was so so. All in all the information given was ok. I just need a little more practice:-). Thank you for this information!!!

That was very simply and straightforward I love it.
This was easy to follow. My wife was helping me and was trying to separate the meat from the shell with a paring knife, but was having trouble. I tried using my thumb (thumbnail away from the shell) and carefully worked my way between the meat and shell. The meat separated very easily. They were delicious with minimal prep time.
Wonderfully simple recipe. Don’t overcook. Maybe 7-8 minutes.
What an easy way to prepare the tails. No “fighting” with the tail to get the meat out once cooked.

Good easy recipe! I’m from Connecticut so we have prepared quite a few lobsters. Always keep it simple, Maine lobster has a delicate sweetness that should be allowed to be tasted not covered up. Perfect recipe!
