Stir together ricotta and honey in a large bowl. Using a paring knife, gently make a slit down the middle of vanilla bean. Scrape out beans with knife and add to ricotta mixture and stir to combine.
Pour heavy cream into chilled glass or metal bowl. Beat on high speed until stiff peaks from. Gently fold whipped cream into ricotta mixture and chill until ready to serve.
Delicious served on top of hot pancakes or French toast with fresh fruit and maple syrup.
