Ham & Cheese Crepes

Ingredients

  • 4 Belgian Boys Crepes
  • 2 tbsp Dijon Mustard
  • 4 slices black forest ham
  • 4 large eggs
  • 1/4 c gruyere cheese
  • 2 tbsp chives
  • Salt and Pepper to taste

Directions

Preheat oven to 350 degrees and line a baking sheet with parchment paper.

Arrange crepes on the baking sheet and spread a small amount of Dijon in the center of each one, followed by a slice of ham, cracked egg and pinch of gruyere.

Fold sides of crepe partially to the center to create a square and contain the egg.

Bake for 12 minutes. Garnish with minced chive, salt and pepper.
