Prepare outdoor grill to medium heat. Cut a thin slice from the tops and ends of the onions (just enough to allow them to sit flat). Peel onion. Starting from the top towards the root end, quarter onion, being careful not to slice completely through onion. (extra-large onions can be cut into eighths).
Place each onion on a double layer of aluminum foil. Gently separate onion wedges and season evenly with rub, salt and pepper. Place 1 tbsp butter inside each onion. Close foil packets tightly.
Grill onions over indirect heat, rotating occasionally, for 30-45 minutes until tender. The last 10 – 15 minutes of cooking, open tops of foil packets and close grill. Allow to cool slightly, top with parsley and serve.

Best onions ever. This recipe is outstanding. But keep in mind these onions are so “gentle” they can be eaten raw just like an apple!
