Pour 2 inches of Fever Tree Ginger Beer into a tall sundae or float glass, then add one small scoop of Marco Vanilla Chai Ice Cream. When the initial foaming subsides, add a second, larger scoop, then top with candied ginger.
Add more Ginger Beer very slowly, waiting for the foam to subside. When the ice cream comes to the top, sprinkle on the gingersnaps, and garnish with the remaining slice of candied ginger.
Serve with a sundae spoon and a straw.
