If using wooden skewers, soak for at least 30 minutes in 3 cups of water.
Pulse in a food processor onion, garlic, parsley and mint to a fine paste. Add the ground beef, white bread, spices, salt and pepper. Puree until evenly incorporated.
Divide mixture into portions the size of a lemon. Use your hands to press into a log around a bamboo skewer so that it is about 1” diameter and 3-4” long.
Grill over direct heat, about 4 minutes per side and serve with Primal Kitchen Special Sauce.
If grilling over an open flame, protect the skewer ends and keep them from burning by creating a grill guard out of a piece of foil folded into thirds and laying down between the wooden skewer end and the cooking grid.
