Grilled Halloumi & Steak Kabobs
Servings: Serves 8
 

Ingredients:
  • 1/2 bunch cilantro
  • 1/2 bunch fresh Italian parsley
  • 1 clove of garlic, chopped
  • 1/2 tablespoon apple cider vinegar
  • 1/4 cup olive oil
  • 1 teaspoon lemon zest, grated
  • 1 pound sirloin steak, cut into 1-inch cubes
  • 1 pound Halloumi cheese, cut into 1-inch cubes


Preparation:

Combine cilantro, parsley, garlic, apple cider vinegar, olive oil and lemon zest rind in a food processor; pulse for 1 minute. In an airtight container, combine steak and marinade and refrigerate for 3 to 4 hours.

Preheat grill to high. Carefully skewer alternating meat and cheese. Grill 2 to 3 minutes then carefully turn, touching only the meat as you turn. Cook an additional 2 to 3 minutes, remove from heat and serve.


 
TFM Tip WHAT IS HALLOUMI CHEESE?

Halloumi cheese originates in Cypress and is traditionally made from a combination of sheep and goats? milk. This versatile cheese is similar in texture to fresh mozzarella and features a higher melting temperature than most cheeses. Because of this higher melting temperature, Halloumi can be grilled or fried to golden brown perfection on the outside with a soft, never runny, texture on the inside.
